Cheesy Low FODMAP Beef & Pasta, One-Pan Style

Ingredients

  • 1 lb lean ground beef
  • 8 oz gluten free rotini pasta
  • 1 ½ cups Fody Low FODMAP Marinara Sauce
  • 1 ½ cups water
  • 1 ½ teaspoons Low FODMAP Vegetable or Low FODMAP Chicken Soup Base
  • 1 teaspoon dried oregano
  • ¼ teaspoon fresh ground black pepper
  • 1 cup shredded mozzarella cheese
  • 2 tablespoon chopped fresh parsley

Directions

In a large, oven-safe skillet, brown and crumble the beef over medium-high heat. Transfer cooked beef to a paper towel-lined plate to drain. Return beef to the skillet and stir in the dry rotini pasta, Fody Marinara Sauce, water, Fody Soup Base, oregano and black pepper. Bring mixture to a boil, reduce heat to low, and cover and simmer 15 to 17 minutes, or until pasta is al dente. While the Low FODMAP beef mixture is simmering, heat your broiler.

Once pasta is cooked to al dente and the water is absorbed, remove skillet from heat and sprinkle the cheese evenly over the top. Place under the broiler and cook 1 to 2 minutes, or until cheese is melted and lightly browned. Sprinkle with the fresh parsley and serve your cheesy Low FODMAP beef and pasta.

This dish is delicious served with a simple salad or your favorite Low FODMAP steamed veggie.
